The harvest is carried out by hand and in a staggered manner from mid-July to mid-October. The farmers return to the same plant every 6-8 days, depending on the weather conditions.

Once harvested, they are left to ripen in sea salt. Ripening is a necessary step; fresh capers are bitter and unpleasant-tasting. The capers left to ripen in sea salt (about 40% of their weight) remain there for 10 days, during which they are periodically stirred. Once drained, they are placed back in salt (about 20% of their weight) for another 10 days. After this second stage, they are ready to be consumed.

After the ripening phase, with the help of the sun and the wind and with the secret “touch”, the sought-after crunchiness Made in Sapori Unici is achieved.
