Pasticceria Giotto's Classic Artisan Colomba is a naturally leavened cake that brings the authentic flavor of Easter and tradition to the table. Handcrafted with select ingredients, thanks to the collaborative efforts of master pastry chefs and inmates from the Padua prison, this Colomba is based on an original recipe that combines artisanal excellence with the value of a unique social project.
Each Colomba is made through a meticulous artisanal process that takes approximately 72 hours. After preparing the first dough, it is left to rest for 12 hours. This is followed by a second phase in which the dough is enriched, shaped with the traditional pirlatura (rolling process), and left to rest again. The second leavening takes place inside the mold, which is essential for achieving a soft and harmonious texture. Each stage of the process is performed by hand and overseen with extreme care. The meticulous craftsmanship and the choice of top-quality ingredients give each Colomba a unique and unrepeatable character.
