The rind is wrinkled and light gray in color. The interior is soft, melting, and spreadable, ranging from white to straw-yellow in color with distinctive blue-green veins. The flavor is sweet, with pleasant lactic notes and hints of blue marbling, and it is aged for at least 50 days.
Excellent with fresh vegetables, spread on crostini, or as a condiment for pasta dishes. It also pairs perfectly with walnut bread and chestnut mustard.
