The fish comes from the Mediterranean Sea and is processed daily with salt from the Trapani salt pans. It is also aged for at least 45 days to ensure the best organoleptic quality.

Once they've reached the point of ripeness, they're packaged in 100g clear bags and placed in a special machine that vacuum-seals them. After a brief observation period to ensure they haven't lost their vacuum seal, they're labeled or placed in cardboard boxes.
